The fuel of choice to power these massive ovens is natural gas. The burners sit directly beneath the bottom of the oven heating up the stone or ceramic interior rather quickly. Commercial pizza ovens are meant to be used twenty four hours a day. Very rarely are they turned off because they take a bit of time to get back up to the proper cooking temperature. They are turned down lower at night when the establishment closes, but they are not turned completely off, this keeps the ovens warm and makes starting them up in the morning much easier.

Commercial pizza ovens are typically not recommended for residential use because they are largely not practical for home use. They burn more fuel than is needed to satisfy residential needs. Of course the size of these massive ovens is also a bit impractical for home use.

Some folks though love pizza so much that they insist on having commercial pizza ovens in the home. There are special construction specifications that have to be met before the oven can be installed in the home. The walls that the oven is near have to be made from concrete or brick, they also have to have metal shields installed between the drywall and the concrete or brick.

A lot of folks opt for the residential pizza ovens that are a lot like the commercial types, except they are much smaller and use less energy.
